We have a eight foot tall privot hedge surrounding our back yard. It is trimmed several times a season but needs to be pushed back a bit and down about a foot.
Can I safely take a foot offfhe top and off one side of the hedge? It is about 6 feet thick.

Privet hedges (Ligustrum spp.) are very tolerant of pruning. Cutting off old growth and allowing new growth to fill in any gaps creates a healthy looking hedge. I have attached an answer from our library below that discusses pruning of Privets and optimal timing for the best results.
